Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a herb mixture.
Rub the herb mixture onto both sides of the lamb chops, ensuring they are evenly coated. Let the lamb chops marinate for about 15-20 minutes at room temperature to allow the flavors to infuse.
In the meantime, prepare the vegetables. Place the carrot and potato chunks on a baking sheet, drizzle with a little olive oil, and season with salt and pepper. Toss the vegetables to coat them evenly.
Arrange the marinated lamb chops on a separate baking sheet.
