Herb-Crusted Lamb Chops with Roasted Vegetables

Ingredients

  • 4 lamb chops
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Salt and black pepper to taste
  • 4 medium-sized carrots peeled and cut into chunks
  • 4 medium-sized potatoes peeled and cut into chunks
  • 2 cups cherry tomatoes
  • Fresh parsley chopped, for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a herb mixture.
  • Rub the herb mixture onto both sides of the lamb chops, ensuring they are evenly coated. Let the lamb chops marinate for about 15-20 minutes at room temperature to allow the flavors to infuse.
  • In the meantime, prepare the vegetables. Place the carrot and potato chunks on a baking sheet, drizzle with a little olive oil, and season with salt and pepper. Toss the vegetables to coat them evenly.
  • Arrange the marinated lamb chops on a separate baking sheet.
  • Place both baking sheets in the preheated oven. Roast the vegetables for about 25-30 minutes or until they are tender and slightly golden. Cook the lamb chops for approximately 12-15 minutes or until they reach your desired level of doneness (medium-rare, medium, etc.).
  • During the last 5 minutes of roasting, add the cherry tomatoes to the baking sheet with the vegetables, allowing them to roast and slightly burst.
  • Remove both baking sheets from the oven. Let the lamb chops rest for a few minutes before serving.
  • To serve, plate the lamb chops alongside the roasted carrots, potatoes, and tomatoes. Garnish with chopped fresh parsley for a pop of color and added flavor.
