1block of firm or extra-firm tofupressed and cubed
1red bell peppercut into chunks
1yellow bell peppercut into chunks
1red onioncut into chunks
1zucchinisliced into thick rounds
1cupof cherry tomatoes

FOR THE CURRY MARINADE:
1/4cupof coconut milk
2tablespoonsof olive oil
2tablespoonsof soy sauce or tamari
1tablespoonof maple syrup or agave nectar
1tablespoonof curry powder
1teaspoonof ground turmeric
1teaspoonof ground cumin
1teaspoonof ground coriander
2clovesof garlicminced
1-inchpiece of gingergrated
Juice of 1 lime
Salt and pepper to taste
Instructions
Prepare the Tofu:
Press the tofu to remove excess moisture. Cut the tofu into 1-inch cubes and set aside.
Make the Marinade:
In a large bowl, whisk together the coconut milk, olive oil, soy sauce or tamari, maple syrup or agave nectar, curry powder, turmeric, cumin, coriander, minced garlic, grated ginger, lime juice, salt, and pepper until well combined.
Marinate the Tofu:
Add the tofu cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, allowing the tofu to absorb the flavors.
Prepare the Vegetables:
While the tofu is marinating, prepare the vegetables by cutting them into chunks or slices, suitable for skewering.
Assemble the Kabobs:
Preheat your grill or grill pan over medium-high heat. Thread the marinated tofu and vegetables onto the skewers, alternating between tofu, bell peppers, onion, zucchini, and cherry tomatoes.
