Healthy Pumpkin Seed and Cranberry Bars

These healthy pumpkin seed and cranberry bars are a fantastic addition to your snack rotation. They’re not only delicious but also packed with nutrients that will keep you energized throughout the day. Plus, they’re easy to customize with your favorite nuts, seeds, and dried fruits.

Ingredients

Dry Ingredients:

  • 1 cup of rolled oats
  • 1/2 cup of pumpkin seeds
  • 1/2 cup of dried cranberries
  • 1/4 cup of sunflower seeds
  • 1/4 cup of chia seeds
  • 1/4 cup of flaxseed meal
  • 1/2 cup of unsweetened shredded coconut
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of salt

Wet Ingredients:

  • 1/2 cup of almond butter or any nut butter of your choice
  • 1/3 cup of honey or maple syrup
  • 1 teaspoon of vanilla extract

Instructions

Prepare the Pan:

  • Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

Mix the Dry Ingredients:

  • In a large bowl, combine the rolled oats, pumpkin seeds, dried cranberries, sunflower seeds, chia seeds, flaxseed meal, shredded coconut, cinnamon, and salt. Stir until well mixed.

Combine the Wet Ingredients:

  • In a small saucepan over low heat, melt the almond butter and honey (or maple syrup) together, stirring constantly until smooth and well combined. Remove from heat and stir in the vanilla extract.

Mix Everything Together:

  • Pour the wet mixture over the dry ingredients. Stir thoroughly until all the dry ingredients are evenly coated and the mixture starts to come together.

Press into the Pan:

  • Transfer the mixture into the prepared baking pan. Use a spatula or your hands to press the mixture firmly and evenly into the pan. Make sure it’s packed tightly to help the bars hold together.

Chill and Set:

  • Place the pan in the refrigerator and let it chill for at least 1-2 hours, or until the mixture is firm and set.

Cut into Bars:

  • Once the mixture is set, lift it out of the pan using the parchment paper overhang. Place it on a cutting board and cut into bars of your desired size.

Store and Enjoy:

  • Store the bars in an airtight container in the refrigerator for up to two weeks or freeze them for longer storage. Enjoy these bars as a healthy snack anytime!
